项目概况 本项目通过微胶囊技术,减轻环境因素对茶多酚的破坏,大大提高其储存期,防止其功能性受到破坏;同时通过微胶囊技术,控制茶多酚在食品中释放速度和其被人体摄入后在肠道中的释放速度。通过对壁材的优化配比,可使产品成为油溶性茶多酚,扩大其应用范围。本项目省级鉴定,“通过微胶囊技术得到的产品茶多酚含量达35%,茶多酚包埋率达72%,该产品能均匀分散于油中,并具有良好的抗氧化效果,为茶多酚的利用开辟了新的途径,达到国内同类研究的领先水平”。食品加工企业可接产。

Research & Development of Microcapsule Oil-soluble Tea Polyphenol
Project Description
The project will alleviate the damage caused by environmental element to tea polyphenol and greatly extend its storage period and prevent its function to be destroyed. Meanwhile, it will control the release speed of tea polyphenol in food and in intestinal tract through microcapsule technique. By optimizing surface materials collocation ratio to make products become oil-soluble tea polyphenol and extend its applied range. Assessed by provincial authoritative organization, this project will get products of which tea polyphenol content accounts for 35% and can distribute equably in oil and get excellent antioxidation. This technology reaches advanced level compared to other researches in this field at home and opened a new way to apply tea polyphenol. Food processing plants can produce this product.
